2 chicken breasts cubed (could also use beef)
1/2 cup broccoli
1/2 cup mushrooms sliced
1/2 cup bell pepper sliced (to your desired size)
1 small tomato cubed
1/2 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. basil
2 tbs. olive oil
Salt & pepper to taste
Spaghetti for 2
Cube and saute chicken on stove top with salt & pepper in oil.
While chicken is cooking stir-fry all veggies in oil and seasonings. And while they are also cooking start water for spaghetti. Once cooked drain pasta.
Once all 3 items are done, chicken, veggies, and pasta, mix all ingredients together in pasta pan. You can add a little more oil and top off with a dash of seasonings to make sure pasta and chicken are completely covered in the oily goodness. Top off with parmesan cheese and enjoy!
This is a go to meal in our household, and if you're looking to leave out the carbs simple cook the chicken and veggies for an Italian stir-fry!
