Hello Ladies, the holiday season is just around the corner! We’ll be decorating our church for our Thanksgiving celebration on November 22 followed by the start of Advent on the 26th. Traditionally the Altar Guild is responsible for these special occasions and we would love to have you join us with your new ideas and extra hands. The Sunday night worship and leadership team have been busy preparing for an awesome time of worship as we give Glory To God Alone, in recognition of the last week of reformation. Even if you don't regularly attend Union or you attend one of the morning services we invite you to join us Sunday evening, October 29 for a different and special service. We hope to see you there!
I have yet to meet a person who doesn't like trying something new; especially food! One thing I have come to love about bible studies over the years is the fact that the women take the time to prepare delicious recipes from around the world to share with their sisters in Christ.
The following recipe I am about to share comes from such an experience. At that point in time quinoa was something I had heard about, but had never tried, and really didn't quite know what it was. One morning at bible study my friend, Megan, brought this delicious Quinoa Mexi-Lime Salad. Saying it was amazing is an understatement. It was out of this world! She brought crackers and crema to go along with it. It was a mouthful of an experience! I have since then made it countless times. I have done different twists depending on what I have on hand and to be adventurous too! I don't always have bell pepper handy and have often omitted that. Sometimes I have used pinto beans instead of black beans. Most recently, I have added chicken and slices of avocado to it to make it a complete meal! I have never added the jalapeno and it has always turned out fine. As for the actual quinoa you can use any color. In the picture I used half white and half red. Give it a try - you won't be disappointed! Quinoa Mexi-Lime Salad Ingredients: • 4 1/2 cups cooked quinoa • 1 can black beans, rinsed + drained • 1 can yellow corn, rinsed + drained • 2/3 cup red bell pepper, diced • 6 scallions, chopped (whites and greens) • 1/4 cup tightly packed cilantro, chopped • 1 large jalapeno, remove seeds and dice • 1/3 cup lime juice • 1 1/2 tsp salt • 2 Tbsp cumin • 2/3 cup olive oil • S&P to taste Directions: Cook quinoa according to package directions (1 1/4 cup dry). Let cool. Mix beans, corn, pepper, scallions, cilantro and jalapenos. Add cooled quinoa and mix well. In a separate bowl, mix lime juice, salt, cumin and olive oil. So I put them all together one day and I was pleasantly surprised with the result. This can be served over pasta, rice or zoodles (zucchini noodles).
Ingredients: 4-6 slices of bacon, cooked till crispy, crumbled and set aside 1 lb of chicken breasts, cut into bite size pieces 1 large garlic clove, minced 6-8 Sundried tomato halves, chopped up 2 Tab of the oil the tomatoes came in or Olive Oil, divided 1 small bunch of basil leaves, sliced into thin slivers (save some to sprinkle on top before serving) Salt and pepper 1 cup of light cream - optional Directions:

You may have seen the movie, as have I, but like most book to movie adaptations, it doesn't quite measure up and the book is definitely worth reading if you haven't already. The book is a memoir of sorts about a family and their life with "the world's worst dog". Written by John Grogan, a newspaper columnist by trade, he began writing columns about Marley and then his wife encouraged to turn them into the book we can all enjoy now. Marley is a big golden labrador who doesn't know his own size and strength. He often gets himself and his owners in trouble, whether it's jumping out of a moving car's window, terrorizing the house due to a thunderstorm, or going to the bathroom on a public beach. But like most dogs, Marley passes away and his family realizes that he wasn't the world's worst dog, but the most loyal and loving dog. I laughed and cried throughout the book. It's a perfect easy read especially for those of us who have owned pets that become family members. It's an experience most people in this world can relate to. I have come back to read this book multiple times and would recommend it to anyone looking for an easy, relaxing, relatable book. I want to give a huge THANK YOU to the women of Thursday mornings for blessing me and subsequently my husband and soon to be baby with a beautiful baby shower! It was already a great morning of discussion about Noah and the Ark, but it was made even better by celebrating with so many new friends, all of which were mothers. I so appreciate your love for my family and me. Not a week goes by where multiple women come up to me with well wishes and questions of how I'm doing during this pregnancy. Soon (only 3 weeks!!) I'll be able to share with you all my new pride and joy. I'm so glad Alvaro and I have been able to find a church home so quickly in Guatemala. I feel secure that our children will be raised in a safe, yet challenging, place of worship where they can come to know the love of Christ not just through his or her parents, but through peers and mentors of Union Church. I thought I would share some photos of the beautiful and delicious lunch we shared yesterday. Again, thank you to the women who organized, decorated, cooked, and blessed us with a monetary gift to buy some much needed diapers. I love you all for it and won't ever forget this blessed shower. ~Abby Morales What says fall better than a cup of hot chili? Nothing! And it's time for our annual chili contest and talent show! On Saturday, November 4 come out and enjoy a variety of winning chili recipes and enjoy the entertainment of some of our most talented church members. Better yet, join in on the fun! If you have a delicious chili recipe or an amazing talent share it with everyone! All you have to do is sign up at the Women's Ministry Board at Union Church.
So start practicing your talents and perfecting your chili and we'll see you on November 4th! The news of yesterday's events in Las Vegas rang across the United States and around the world. It was devastating news to wake up to and if you are like me, you're growing weary of waking up to these sorts of news stories. For many of us US expats, even though we are far away from our home country we feel a strong connection to our fellow citizens and our country during these moments. But to be completely honest I sometimes don't know the words to say or the feelings to feel in order to find peace in these sorts of situations. All I feel is grief and exhaustion and all I can do is cry and pray.
However I do find many of my thoughts have been dominated by our discussions during Thursday morning Bible Study. Particularly I think of Adam and Eve and the second Adam, Jesus. I think of how through one man we live in a cursed, broken world. And in that cursed and broken world we see and live through wars and deadly, painful events. But....BUT Christ has come and will come again to redeem this world In His perfect timing. We saw this in our study book, "The Promised One: Seeing Jesus in Genesis" when Nancy Guthrie provided multiple scriptures (particularly for me Romans 5:12-21) and when she states on page 82: "Adam lost for us the blessing of God that made everything 'very good.' Because of his rebellion, the blessing became a curse, everything good became infiltrated with evil, what was so beautiful became broken. But once again, Christ has gained for us more than Adam lost for us." These horrible actions and events may seem like the end and they may want us to give up and stop pursuing God and goodness. But it is not the end. God knew what would happen yesterday and every other similar event in history, and what may come. But He knows (and we know) it will all be redeemed and we will have the greatest pleasure seeing the redemption come to fruition and we will enjoy the blessings and much more of the restored paradise Garden. I pray to God not for answers but for these senseless acts, and of recently, the natural disasters to cease in God's name, and one day they will and I for one wait anxiously for the day when pain will cease.
